Exotic Pineapple and Pistachios Salad with a Mango & Orange Dressing
Carolina Doriti prepared for Wise Home Cooking a fresh and exotic salad full of flavors, ideal either for an an accompaniment or a fresh main meal!
1 cup fresh pineapple, diced into bite-sized pieces
1 avocado, sliced into bite-sized pieces
1 Lebanese cucumber, cut into half lengthwise and thinly sliced
1 spring onion, chopped
3-4 red radishes, thinly sliced
50 gr wild rocket*
20 gr red rocket*
20 gr mustard leaves *
50 gr baby spinach *
100 gr lettuce, sliced
2 tablespoons dill, chopped
½ cup shelled, Wise Greece exclusive Salted pistachios
For the dressing
2 tablespoons white wine vinegar
6 tablespoons Green & Blu Organic Extra Virging Olive Oil with mango & orange
½ teaspoon orange zest
Freshly ground black pepper
*You may use any mixed salad leaves of your choice that contains rocket and baby spinach, and mix it with the lettuce.
First make the dressing. In a small bowl whisk the vinegar with the zest. Start adding gradually the olive oil condiment while whisking, until all is incorporated. Season with salt and pepper and set aside.
In a large bowl add all the salad ingredients, leaving out half the amount of the pistachios nut to decorate your salad.
Add in the dressing and gently toss. Serve in a platter or salad bowl and sprinkle with the remaining pistachios.
